Today we’d like to introduce you to Alexis Douglas
Alexis, we appreciate you taking the time to share your story with us today. Where does your story begin?
My love of food all started back when I was a child. Making Christmas Cookies with Gammy was a yearly tradition in the family. Seeing the joy that our efforts brought to everyone in the family, young and old was worth all of the hours we spent together!
Getting a formal education in the Culinary Arts; both in Euclid High School, and at The Columbus Culinary Institute at Bradford University helped introduce us to new and exciting flavors of the world.
Getting to use our extensive background in the vast world of food within our favorite medium, Desserts, has been our dream for years! And finally having the ability to launch Alexis’ Pantry 3 years ago has been an eye opening adventure!
I absolutely adore the process of recipe development. Starting with a simple idea like trying to make one of my favorite desserts Red Wine Poached Pears into a conveniently packaged Cookie while maintaining all of the complexly concentrated flavors with our Autumn seasonal Spiced Pear Almond Cookie! Currently Alexis’ Pantry our Cottage Bakery can be found at various popup events around Columbus Ohio!
We all face challenges, but looking back would you describe it as a relatively smooth road?
We’ve dealt with plenty of challenges over the last 3 years.
Figuring out an aesthetically pleasing, functional, and most of all EFFICIENT label has taken us multiple attempts and rethinking! Keeping the ability to continuously add new desserts to our offering list was paramount during the process of looking into new labeling options. Our best solution, Purchasing an inexpensive thermal printer and developing our labels for 4×6 thermal paper to wrap around our delicious cookies!
We’ve also figured out a working pricing model for our products through some knowledge obtained by taking some basic pricing classes. Then following that up with a few years of spreadsheet trial and error!
Anytime we are in Research Development their are always a couple hiccups along the way. I think it took us a solid 3 attempts at the spiced pear almond cookies until they were perfect! I initially experimented with fresh pears, but soon discovered they were too moist to create a structurally sound cookie. That’s when I switched to dried pears! It keeps the cookie texture perfect while getting the general fall vibes we are going for. I think it also took us a second attempt when we were making the Mulled Wine Reduction, the original recipe for Mulled Wine that I found online used honey in it and the additional sugars affected the texture poorly, so we took that added sugar out as well. It’s always a really exciting process, to figure out where you need to make adjustments in the development stage!

Alexis’ Pantry is a Columbus, Ohio based Cottage Bakery specializing in bold and inventive flavors. The oversized cookies we offer push the boundaries of traditional baked goods. Our Fall/Winter Seasonal cookies include our: Spiced Pear Almond cookies (with dried pears, and our homemade Mulled wine reduction filled with spices), Maple White Chocolate Pecan cookies (using real Maple syrup, and freshly toasted Pecans), and our Peach Cheesecake cookies (flavored with freeze dried peaches).
We are also able to work with you to create the custom flavored cakes, and cookies of your dreams! We were lucky enough to have opportunity to work with several Columbus residence over the years to create several wedding cakes (including MINE!!!), specialized gender reveal cookies, birthday cakes, and much more!
What would you say have been one of the most important lessons you’ve learned?
Tenacity and adaptability are key principles I live by. I believe in embracing a mindset of continuous improvement, constantly evolving and refining my skills. With every step, I strive to learn something new, turning challenges into opportunities for growth and pushing the boundaries of what’s possible.
