Today we’d like to introduce you to Adam Smith.
Hi Adam, thanks for sharing your story with us. To start, maybe you can tell our readers some of your backstory.
We have always butchered our own animals for meat. Our freezers were always full. But we still bought deli meats from the grocery. We have a kid that would eat a pound of store bought deli meat in one sitting. If you have ever looked at an ingredient label for store bought deli meats, you would understand why we started making our own. It got to the point that friends and family would tell us that we should sell our deli meats. So my wife and I started going to Farmers Markets to try it out. Things went well, so we started looking for a place with a commercial kitchen to make and sell the meats. Fast forward 3 years now, and we have evolved into something that is hard to describe. We make and sell 8 flavors of deli meats without any artificial flavoring, no artificial cures, it’s just meat, smoke, and seasonings. We also have a restaurant that highlights those meats in sandwiches and wraps. We are now doing pizza and we make our own crusts. Since our start, our daughter has come on as our pastry chef, which she went to school for and she makes some amazing desserts. Our smoked meat lineup has expanded to whole meats like brisket, turkey breast, chicken breast, and everything pork. We have 16 beers on tap, most of which are craft beers that are brewed somewhat locally. Local wines. We have a farmers market next to our restaurant where we grow some of our own produce and offer other produce grown mostly local.
If you told me 3 years ago that today we would have a restaurant, a bakery, and a farmers market all on top of the deli meat thing, I would not have believed it. But here we are. The ever evolving Deli Barn!
Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
It has not been a smooth road. There are always challenges. Our place basically sits out in the middle of nowhere and our advertising budget is very small. So just getting people to know about us has been the biggest struggle. I think we are turning that corner a bit now. Word of mouth is the best advertising. And it is working to the point that we need to rethink our staffing setup.
Thanks for sharing that. So, maybe next you can tell us a bit more about your work?
I smoke meat. With that smoked meat, we create things that you cannot get anywhere else. We focus on simple ingredients and freshness.
Do you have recommendations for books, apps, blogs, etc?
I like to focus on my mental health. If I have time to read, or listen to anything, that s my focus.
