Rising Stars: Meet Carla Heiert

Today we’d like to introduce you to Carla Heiert.  

Alright, so thank you so much for sharing your story and insight with our readers. To kick things off, can you tell us a bit about how you got started?
While in culinary school at Midwest Culinary Institute at Cincinnati State, I met a French Chef whom I trained with until opening a restaurant with him at Findlay Market. French Crust Cafe and Bistro was more than a job to me and taught me the true value and passion of the industry. 

I’m sure you wouldn’t say it’s been obstacle free, but so far would you say the journey has been a fairly smooth road?
I was lucky to have been taken under the wing of an incredible chef. The struggle to balance work life and personal life is always hard. Staying just busy enough to ensure you didn’t miss a single learning experience while still having time for yourself and your family and friends can be challenging in this industry. 

Can you tell our readers more about what you do and what you think sets you apart from others?
I have always found comfort in staying close to my roots, which is French Cuisine. Through the years, I’ve branched out and put my own spin on things, but nothing compares to finalizing a dish with one of the best authentic, lick-your-plate-clean, French Mother Sauces, or béchamel, velouté, espagnole, hollandaise, and tomato). 

I’ve encountered layers upon layers of cooking and in this hectic industry. I have always found peace in butchery and making hearty soups and rich sauces, which is very common for French culinary roots. 

What has been the most important lesson you’ve learned along your journey?
Early on, I learned to stay humble, and the fun stops when you stop learning. I have had the best opportunity to learn from such a great group of chefs who taught me cooking aspects that you just won’t learn from a book. How to truly appreciate what you’re cooking, the tools you are using, where your products come from, how they’ve been treated – all of these are important things to remember as a chef. 

Pricing:

  • Y’all Café offers affordable breakfast and lunch options with breakfast available all day from 8 a.m. -2 p.m., seven days a week. We also offer a special brunch menu on the weekend, weekly burger and grilled cheese specials, and a specialty French toast on the weekend. Lunch and Breakfast options range in price from $7 – $15 so there really is something for everyone. We also have free two-hour parking right across the street, which makes a convenient stop in downtown Covington.
