INTERVIEWER: So, let’s start at the beginning. Koose Confections has a pretty mystical origin story. Where did the idea really take root?
KOOSE: Well, the poetic version is that I came down from the mist-covered mountains with a sacred book of recipes and some shade-tree philosophy. And honestly… that’s not too far off. I’ve always seen baking as something a little magical—part tradition, part intuition, part creativity. Koose Confections grew out of that blend.
INTERVIEWER: What were those early days like?
KOOSE: It was me, in the kitchen, experimenting endlessly with biscotti, cookies, and whatever else came to mind. My hands were guided by years of watching my parents—my biggest teachers—work with care, patience, and joy. They taught me that food is an experience, not just a product. So even in the beginning, every batch was an attempt to capture that feeling.
INTERVIEWER: Your products today have a very artisanal feel. Was that intentional from the start?
KOOSE: Absolutely. I’ve always believed that baked goods should taste like they carry a little history with them. Our biscotti and treats are rooted in tradition, but also in experimentation. I played with ingredients, textures, techniques—always trying to create something that felt both familiar and new. The goal was simple: mesmerizingly delicious treats that bring a moment of calm or joy into someone’s day.
INTERVIEWER: Koose Confections has become known for its biscotti in particular. Why biscotti?
KOOSE: Biscotti has this timeless quality. It’s humble, simple, but incredibly expressive—you can pack so much flavor and texture into it. And it pairs with the moments people cherish: morning coffee, an afternoon break, a late-night treat. I loved the idea that something we made could become part of someone’s daily ritual.
INTERVIEWER: Who helped shape Koose Confections along the way?
KOOSE: My parents, first and foremost. They taught me everything—about baking, about work ethic, about life. Beyond them, a few local icons and mentors were incredibly generous with guidance. You don’t forget the people who share their wisdom when you’re still learning the ropes.
INTERVIEWER: And today? What does Koose Confections stand for?
KOOSE: It stands for experience. For thoughtful sweetness. For that moment when a biscotti or cookie transports you somewhere calmer, cleaner, more serene. We still bake with the same intention as day one: bring people a treat that feels crafted, cared for, and a little bit magic.
