Community Highlights: Meet Missy Nelson of Nelly Belly Woodfired Pizza Trucks

Today we’d like to introduce you to Missy Nelson.

Hi Missy, it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start, maybe you can share some of your backstory with our readers.
Our company started catering over 30 years ago. We got our start in the golf outing industry, specializing in outdoor grilling. The next step was taking over the food concessions at several golf courses in Northeast Ohio. As our kitchen needs started to expand, we purchased a banquet hall and began to cater formal events. Our concessions repertoire started to expand into marinas. In conjunction with opening the first marina location, we decided to launch our new “Nelly Belly Woodfired Pizza & Piadina” Food Trucks, offering the same woodfired at the marina location. Nelly belly was a huge success. When covid hit, we paired down to mainly our Nelly Belly Food Trucks. They were pandemic proof and, in fact, increased in revenues due to the push for outdoor spaces. Food Trucks were the new catering norm and one of the largest growing sections in the food industry. People soon realized the benefit of having food made fresh on location and the hassle-free nature of having a food truck roll in and roll out. Nelly Belly Food Trucks fleet has skyrocketed into the limelight and has won numerous awards. We are so blessed to go be doing something every day that we love; it does not feel like work at all. 

I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
Although our 30 years of catering experience made the process smoother, there was still a lot of trial and error when starting up our Nelly belly food trucks. What events are profitable? How many employees need to work an event? What equipment should we buy? What is a productive truck layout design? What is the best avenue to market our services and product? We now have it down and are geared for growth. We have used this experience to share with future Nelly Belly Franchisees so they can start at the top.

Nelly Belly Woodfired Pizza Trucks specialize in catering events. Corporations are always impressed with how fast we keep the line moving so employees can have enough time to eat during their lunch breaks. Graduation parties are always happy that we take away the stress of the food so they can socialize and enjoy the guests. Weddings are always impressed with our professional set up and staff, and how many guests rave about the food and having a menu they really wanted to eat. Customers who have used other pizza food trucks before us always comment that what sets Nelly Belly apart is like night and day, comparing our professional setup, staff, service, and taste of the pizza to others. Once trying Nelly Belly, we have a repeat customer for life. Our growth has stemmed from these same customers recommending us to their friends and family. 

Nelly Belly has just launched our Franchise Division and will be opening soon a Food Truck Park with outdoor and indoor fun for all ages. 

What has been the most important lesson you’ve learned along your journey?
I have learned how important it is to listen to the opinion of your customers and employees.
