Community Highlights: Meet Ash Chipalu of BRIDGES

Today we’d like to introduce you to Ash Chipalu. 

Hi Ash, we’d love for you to start by introducing yourself.
Bridges Nepali Cuisine served its first meal at historic Findlay Market in Cincinnati, Ohio. I absolutely believed in my Mom Rose Chipalu’s cooking and wanted to share her delicious food to the city and Findlay Market was the perfect spot to do it. Once we realized the food and our concept of serving our authentic Nepali style rice bowls would work, we got beyond lucky to find a permanent physical spot in the eclectic neighborhood of Northside in February 2017. 

The Northsiders welcomed us with open arms. We brought a genuine product, a smile to everyone who comes in, and love for the community. We slowly expanded our menu to some more authentic Nepali dishes such as Momos (Nepali style dumplings) Woh (Savory spiced lentil pancake) and few more; but still keeping it simple so we could focus on quality. Bridges Northside has been in operation in this beautiful location for 5 plus years now. 

After being involved in the downtown farmers market, Bridges opened its second location right on court street in July 2019. This second location affirmed that Bridge’s product, concept, and system would also work in a busy corporate setting to serve busy lunch folks. 

We recently purchased a third location in elmwood neighborhood, which will be our main commissary. The location will be ready to work in few months after construction and it will help us expand to more locations. 

Bridges is a family-owned small business, and I am extremely lucky to have both my parents enjoy owning the restaurant with our hard-working staff. We have come this far with genuine hard work, the passion that we have for our Nepali food, and the hospitality that we enjoy giving and also because we enjoy what we do. 

Can you talk to us a bit about the challenges and lessons you’ve learned along the way? Looking back, would you say it’s been easy or smooth in retrospect?
Establishing a business from scratch will definitely have millions of challenges, but in my opinion a business owners’ main task is to overcome the challenges and obstacles. For it to be a smooth ride it is how you perceive the challenges. For me, I always enjoy being challenged and overcome obstacles. 

We are in the fast casual restaurant business, and one of our main goal is to keep our prices affordable for our customers, for which we need to be efficient in making the product. Many tasks such as making the samosa bread, peeling ginger, were all done by hand in the starting few years of our business. Now after research and the right investment we have mechanized the task which has increased our efficiency and productivity and at the end makes us more profit for the business. 

Great, so let’s talk business. Can you tell our readers more about what you do and what you think sets you apart from others?
In Bridges Nepali Cuisine we serve a simple focused menu with delicious authentic Nepali cuisine and have dishes such as Rice bowls, Momos (Nepali Style dumplings), Chowmein (Nepali stir-fried noodles). 

I as an owner manage the front and back of house, serve customers, make sure all staff is following recipes and food safety protocol. 

The food we serve is in a fast-casual setting, where you will get a taste of Nepal. We are known for our delicious healthy Rice bowls, our Nepali style dumplings called Momos, and hand wrapped enormous flaky samosa. 

Rice bowls and Momos served in a fast-paced environment is very unique which sets us apart from others. 

Although Nepal is small country the flavors are bold and I am proud that we have promoted our Nepali food, culture to people who have never heard about Nepal 

Is there anything else you’d like to share with our readers?
Bridges strictly believes in unity and sharing. 

Bridges primary mission is to serve a completely different Nepali Cuisine in a simple, approachable set- up at a fast-pace environment. 

Although Nepal is from the other side of the world with unique food, culture and lifestyle, we wish to Bridge the gap by touching everyone’s heart through the nutritious and pure delicacies we offer. 

Bridges wishes to share, serve and tend every customer so as to make a deep connection. We love and care for everyone, as everyone is special to us. 

In this big world, everyone has their ups and downs, but Bridges loves to embrace and comfort everyone as one family with the nutritious Nepali dishes in a warm environment so as to create a vibe that will leave a positive impact physically and mentally because:
