Today we’d like to introduce you to Cory Thompson.
Hi Cory, can you start by introducing yourself? We’d love to learn more about how you got to where you are today.
What The Taco was created back in 2018 as a dare/challenge. I was getting bored with my management position at a local hospital and wanted a change. So, I got prepared to do the Montgomery County Fair in July with my new business, What The Taco?!? I bought a large red tent, made a menu, and got ready to show the world (City of Dayton) what I could do! The fair turned out great, and I was happy with the fed back. The following week I received phone calls to have me come out with my tacos to events! I was shocked but happy as well that people loved my food! From July to September, I made enough money to purchase a trailer and really do this. The following year I was busy and could not do my full-time job and the food truck, so I made the choice to do the food truck full-time. I was nervous, scared but excited for this new chapter in my life. I won Best New Food Truck in Dayton.com, Best of Dayton awards. 2019 was winding down, and I was looking forward to 2020, and the Covid happened to us all! Everything got shut down, and it didn’t look good for all food trucks. So, March of 2020, I had a lady reach out asking if I would do catering for her entire neighborhood but safely. So, I heard about this new app called Streetfoodfinder that I could set up online ordering. I used it to be safe with distancing and provide food to all the neighbors. It was a huge success, and other neighborhoods reached out for me to do the same thing. It saved me and also got my name out. So, each year my business has grown, and now I have two trailers. One is called What The Taco?!? that sells unique tacos, and the other is called What The Dilla?!? that serves unique quesadillas.
Alright, so let’s dig a little deeper into the story – has it been an easy path overall, and if not, what were the challenges you’ve had to overcome?
It hasn’t been a smooth road! Lots of challenges like mechanical issues, staff shortages, and vandalism. I actually had someone steal my towing vehicle and generator the night before a big event. All of these obstacles almost stopped me, but my fellow food truckers motivated me to keep going.
Appreciate you sharing that. What else should we know about what you do?
What makes us different is three things. Great customer service, unique tacos, and freshness! Our customer service is very important. We make our repeat customers feel like family and remember the little things about how they want their food. Unique tacos set us apart from your usual taco truck. We have over 60 different tacos for meat lovers, vegetarians, and those with diet restrictions like gluten-free. Everyone can eat at our truck.
