Hidden Gems: Meet Casey Lucio of Graze Station

Today we’d like to introduce you to Casey Lucio.

Hi Casey, thanks for sharing your story with us. To start, maybe you can tell our readers some of your backstory.
Graze Station really started with two moms who love entertaining and bringing people together.

One day we came across the idea of a mobile charcuterie cart on social media and decided this was it. At the time, we also thought, “It’s just cheese, meat, and crackers – how hard could licensing be?” We quickly learned that the food industry, especially locally, is incredibly regulated, and what seemed like a simple concept was anything but simple. It was definitely a crash course in owning a food business.

We started small, with our mobile charcuterie cart, creating grazing tables, and building our business one customer at a time. Our original vision was to grow slowly, with a five-year plan that eventually included opening a café.

Then life changed our timeline.

Our commissary kitchen, where we prepared all of our food, announced it was losing funding and would be closing. We had a decision to make: Find another temporary solution or take a leap and build the space we had always dreamed about. We chose to jump, and our five-year plan suddenly became a two-year plan.

Thankfully, with incredible community support, that commissary kitchen was able to stay open. But by then, we had already committed to our own space and decided to keep moving forward. It was a leap of faith that pushed us further and faster than we ever imagined.

Today, Graze Station has grown into a café, grab-and-go concept, catering company, and mobile charcuterie experience, but we’re still the same two moms who simply love creating beautiful food and spaces where people can gather and celebrate.

The journey has moved incredibly fast, and it hasn’t always been easy. Every new step has brought another set of regulations, inspections, and challenges, but it has also brought incredible opportunities and a community that has supported us every step of the way.

We’re grateful for every customer who has trusted us with their lunches, celebrations, weddings, meetings, and milestones. Graze Station is proof that sometimes the best businesses are built from a shared passion, a spontaneous idea, and a willingness to take a chance.

Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
Our biggest obstacles has honestly been figuring out the regulations and licensing. When we started with a mobile charcuterie cart, it was such a new concept for our area that there really wasn’t a clear roadmap. Depending on who we talked to, we often received different answers because no one had dealt with a business quite like ours before.

As we’ve grown, we’ve added catering, a café, grab-and-go offerings, and an event space, which means we’re operating in several different areas of the food industry. Navigating all of those regulations and making sure everyone has a consistent understanding of what we do has been one of our biggest challenges.

It’s been a lot of learning, a lot of patience, and a lot of advocating for ourselves. We’ve always chosen to ask questions, stay compliant, and do things the right way, even when the process has been confusing or frustrating. There have definitely been moments where it feels like the people you’re relying on for guidance don’t fully understand your business or aren’t necessarily cheering for your success, which can be discouraging when you’re trying so hard to do everything correctly.

But we’ve continued to lead with transparency, ask questions, and keep moving forward. Looking back, those obstacles have made us more knowledgeable, more resilient, and even more committed to building a business our community can trust.

Graze Station was built on the idea that great food brings people together. What started as a mobile charcuterie cart has grown into a café, grab-and-go market, catering company, and event space, but our mission has never changed: creating beautiful, approachable experiences that make gathering easy.

We’re known for customizable charcuterie, fresh grab-and-go options, and catering everything from intimate celebrations to large events. We also love highlighting other local businesses by featuring their products in our café, because supporting our community is a huge part of who we are.

What sets us apart is that we’re more than just a café or caterer—we’re a place where people can grab lunch, build a charcuterie box, shop local, plan an event, or celebrate life’s biggest moments. Behind it all are just two moms with big ideas and a passion for bringing people together.

More than anything, we want people to know that Graze Station is built on community, creativity, and genuine hospitality, and we’re proud to create a space where everyone feels welcome.

We’d love to hear about any fond memories you have from when you were growing up?
My favorite childhood memories are of spending summers in my grandparents’ garden, picking raspberries and strawberries with my Grandma and Grandpa, and gathering around their table every Sunday for family dinner. Those moments are where my love of food, entertaining, and bringing people together began. My grandma had a way of making everyone feel welcome, and her table was always full of incredible food and even better conversation.

The only thing I didn’t inherit was her amazing cooking ability – she was so good that I never had to learn! Thankfully, I found my own way to bring people together through beautiful food and shared experiences, and I like to think a little piece of those Sunday dinners lives on in everything we create at Graze Station.
