Community Highlights: Meet Tommy Earsing of Buffalo’s Best

Today we’d like to introduce you to Tommy Earsing.

Hi Tommy, we’d love for you to start by introducing yourself.
Starting with our grandfather and the generations that followed, our family has been shaped by the restaurant world for more than 30 years. The place where my parents met — the iconic Jolly Roger in Buffalo, NY — became the foundation of who we are today. Those roots inspired us to bring the flavors we grew up with to Cincinnati, growing from a small food truck into a business that now serves more orders at our events than some full restaurants, all fueled by tradition, hard work, and the bold taste of Buffalo.

I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
The journey hasn’t been easy, especially as we pushed into the manufacturing world with our award‑winning sauce — a hard‑fought effort that now lets people enjoy our flavor even when the truck isn’t operating. The struggle has been real at times, but our customers and supporters have made every step worth it, and we’re deeply appreciative of the community that continues to lift us up.

Alright, so let’s switch gears a bit and talk business. What should we know?
Our brand is family‑driven, owned and operated by the same faces you see behind the table when you order. Bringing our Buffalo roots to a new city has been a blessing, and the support we’ve received always puts a smile on our faces — especially on our head cook, my dad Tim. He’s poured passion into every meal that goes out that window, teaching me that cutting corners gets you nowhere: be consistent, be caring, and keep a smile on your face even on the tough days. You can purchase our award‑winning sauce online or throughout the Northern Kentucky area, and we’re working hard to expand into Southern Ohio soon and the surrounding areas, we hope in the years to come to be a household brand in every refrigerator in America.

Where we are in life is often partly because of others. Who/what else deserves credit for how your story turned out?
Our business is truly a family operation, built on the equal efforts of my dad, my mom, my sister, and me — each of us bringing something essential to the table. Dad adds his unmistakable touch to the cooking, pouring passion into every meal; my sister keeps the kitchen running smoothly; Mom handles scheduling and events; and I’m the face of the business, It’s a bond that has worked incredibly well for the last five years, rooted in our Buffalo heritage and strengthened by the support we’ve found in Cincinnati and Northern Kentucky.
