Life & Work with Isabel Trujillo


Today we’d like to introduce you to Isabel Trujillo. 

Isabel, we appreciate you taking the time to share your story with us today. Where does your story begin?
Bravo Vegan is a grassroots, pop-up, festival enthusiast vendor, that prides itself in using traditional Mexican recipes that incorporates a plant base and animal-free diet. Our business is family-based. The business was set up to seek other options of employment for our mother at the same time sharing her knowledge and culinary flavor. Our cocinera (chef) Aida Bravo. She uses seasonings and other authentic flavors that come from generations of great cooks in her family. Bravo Vegan. She also started about seven years ago participating as a vendor for the Vegan Vortax event and other vegan small events on the north side of Chicago. We then Started expanding with events in different areas of the city from farmers’ markets to vegandale and test kitchen. We love to share other options of authentic Mexican flavor we have now establish a strong customer following all over Chicago. Try some of our customer favorites tamales like Bean Bliss (black bean soy chorizo) or our Oxaqueño (green mole and zucchini) and our tacos al pastor and arabes the next time you see us. thanks for all your support and God bless. 

Can you talk to us a bit about the challenges and lessons you’ve learned along the way? Looking back would you say it’s been easy or smooth in retrospect?
Like any other business that is just starting out struggles to keep up in business there has been events that we might not even make enough to even cover for the entry especially at the beginning of our business in others we had to rely on family and friends to help out because the cost of starting an a continue workflow has been difficult and hiring extra bodys to be the support base can be very costly special this past fall was one of the difficult times Our cocinera had an accident on one of the events that cause her to break her knees and because is a family business we rely on each other and our family is rather small is compose of my brother my mom our famous cocinera, my husband and myself, which we all have a specific role in our business making things a bit complicated once one is out luckily we had the opportunity to be able to hire someone over the remaining time of the year as well of this year 

Thanks – so what else should our readers know about your work and what you’re currently focused on?
We sell traditionally Vegan Mexican cuisines 

We are proud to share our ake in vegan Mexican cuisine but mostly proud of having a stable business for over 7 years 

What do you like and dislike about the city?
I truly believe our city is the best city in the whole world. There is always something to do in it. You always learn something new and of course can’t forget about the weather. 

The least is having way too much snow but even then, we can always make it work.
