Today we’d like to introduce you to Mauricio Chaqueco.
Mauricio, we appreciate you taking the time to share your story with us today. Where does your story begin?
So, they started as a ghost kitchen making Mexican food and Italian food running under the names Mexi-Taco & Little Italia. After 6 months in the ghost kitchen, they had the opportunity to sign a lease in parma heights, and they took advantage. Now they have been in this location since 12/13/2022, and their plan is to continue making delicious and authentic Italian food but also introduce a Mexican menu in the next few months
Can you talk to us a bit about the challenges and lessons you’ve learned along the way? Looking back would you say it’s been easy or smooth in retrospect?
As first-time restaurant owners, they have been navigating through all the new tasks that come with opening up a restaurant. They continue to learn and grow in the business. Currently, the biggest struggle is not being able to secure a liquor license and as you know people love to have a glass of wine with dinner. Hopefully, that will be solved soon so we appreciated the patience and support the community has shown.
Thanks – so what else should our readers know about Little Italia?
We are a small Italian restaurant that welcomes everyone and has delicious authentic Italian dishes and homemade pasta & sauces. Something that will definitely set us apart in the coming future is a secret project we are working on. We have cooks very experienced in other foods and there will be a new concept introduced soon with a New Mexican menu being offered. It will be a unique concept, but we are sure people will love the ability to choose what they are in the mood for! We also have plenty of space for any large parties or all those special occasions and you can even bring live music, or we can help you!
